Recipe preparation
- 1Grease the loaf tin with oil using a pastry brush. Dice the tomatoes into small pieces.
- 2Line the base of the tin with slivers of pepper. Mix the meats, beaten eggs, tomatoes, thyme and breadcrumbs together. Season with salt and pepper.
- 3Pour the mixture into the tin. Cover and close the tin with a sheet of aluminium foil.
- 4Place the tin inside the pressure cooker. Pour three tbsp water into the bottom of the recipient. Close the pressure cooker and bake on Simmer for 1 hr.
- 5Start baking by pressing the Start/Stop button, positioning the pressure button to Steam. Remove the meatloaf from the pressure cooker, leave to cool and store in the fridge for 3 hrs.
- 6Serve the meatloaf with gherkins and mustard for example. Make the meatloaf with fried onions instead of the tomatoes. Add 1 tsp ketchup or Worcestershire sauce.
