1Grease the loaf tin with oil using a pastry brush. Dice the tomatoes into small pieces.
2Line the base of the tin with slivers of pepper.
Mix the meats, beaten eggs, tomatoes, thyme and breadcrumbs together. Season with salt and pepper.
3Pour the mixture into the tin.
Cover and close the tin with a sheet of aluminium foil.
4Place the tin inside the pressure cooker. Pour three tbsp water into the bottom of the recipient. Close the pressure cooker and bake on Simmer for 1 hr.
5Start baking by pressing the Start/Stop button, positioning the pressure button to Steam. Remove the meatloaf from the pressure cooker, leave to cool and store in the fridge for 3 hrs.
6Serve the meatloaf with gherkins and mustard for example.
Make the meatloaf with fried onions instead of the tomatoes.
Add 1 tsp ketchup or Worcestershire sauce.
