  • 1Peel and cut the shallots into 4. Mix the lardons with the sage leaves and shallots. Brown the mix in a very hot pan with 1 tbsp olive oil. Season with salt and pepper.
  • 2Cut the pork loin into two halves lengthwise and spread the mixture on one half of the pork loin.
  • 3Cover with the other half of the pork loin, place the slices of bacon over the pork loin, overlapping each other and tie up. Peel and chop the onions.
  • 4Pour the oil into the cooking recipient and press Brown. Brown the roast on all sides with the lardons and onions. Close the pressure cooker and cook on Pressure for 30 minutes.
  • 5Start cooking by pressing the Start/Stop button, positioning the pressure button to Pressure. Rinse the apples and cut them into quarters. Once the cooking has finished, release the steam from the pressure cooker before opening.
  • 6Place the apple quarters in the pressure cooker, close and press Start/Stop. Cook on Steam setting for 10 minutes and serve.
  • 7You can also put the apples in the pressure cooker from the start. They will be caramelised and puréed. If there is not enough juice, pour 1 small glass of hot water onto the apples and leave the roast to cook further, on Steam.
