Recipe preparation
- 1Peel vegetables and cut in pieces. Cut leg of lamb in large pieces. Peel and mince onions.
- 2Cook them in hot olive oil for 2 hours on medium level. Sprinkle with all spices and stir.
- 3Add all pieces of meat and poultry, stir in spices and cook 5 minutes. Dilute tomato concentrate in stock.
- 4Add carrots, potatoes and turnips and cover ingredients with hot stock. Stir. Simmer 30 minutes.
- 5Add courgettes and chickpeas to pot and pour wheat semolina into steaming basket. Cover and cook another 25 minutes.
- 6At last moment grill sausages in a pan without fat and add to pot. Serve couscous with semolina and decorate with fresh coriander.

- 4 Merguez sausages
- 2 courgettes
- 2 carrots
- 4 small turnips
- 2 potatoes or mashed potato

- 1 tsp. black pepper
- 1 tsp. ginger powder
- ½ tsp. saffron leaves
- ½ tsp. Ras el Hanout spices
- 1.5 l hot chicken stock

- 3 sprigs coriander for decoration
