  • 1Peel and mince onions. Set Couscook on HIGH for 2 hours.
  • 2Fry onions in olive oil with cumin and ginger about 5 minutes. Stir and cover. Cut candied lemon in quarters.
  • 3Peel carrot and cut in cubes. When onions are translucent, add carrots, plucked coriander and lamb pieces. Stir and cover again.
  • 4Cook on HIGH for 5 minutes, then reduce to MEDIUM. Add dates, stir and cover. Cook thus for 1 hour 30 minutes.
  • 5Peel and quarter apples and stir in honey. Arrange apples in steam basket. Add pepper. Cook for 20 minutes.
  • 6At moment of serving, add apple flesh.
