Recipe preparation

  • 1Rinse courgette and cut in pieces. Peel new onions. Place all vegetables in Couscook steam basket.
  • 2Pour water in pot to 3 times volume of rice. Add vegetable stock and tomato concentrate. Set Couscook on HIGH for 30 minutes. Pour rice into water.
  • 3Stir, cover and cook rice and vegetables. Once cooked, keep warm on a plate and cook duck. Set Couscook on medium level.
  • 4When it is hot, place duck skin downwards into pot. Cover and cook duck for 15 to 25 minutes, depending whether you like it rare or medium.
  • 5Add pepper liberally and serve with vegetables and rice.
